Spicy Tomato and lentil soup

This is the yummiest recipe.
Spicy Tomato and lentil soup

1 large onion finely chopped
40ml olive oil
1 ts ground ginger
1 ts ground coriander
1 ts ground cumin
1 ts sweet paprika
1 ts sugar
¼ ts ground white or black pepper
½ ts turmeric
½ ts cinnamin
¼ ts chillipowder (optional)
¼ ts ground nutmeg
750ml -1 litre chicken stock/water or a combination of both. Avoid stock cubes as they are too salty
100g red lentils
2 x 400g cans crushed tomatoes
salt and pepper to taste
½ cup fresh coriander chopped.

Heat olive oil in a heavy pan, gently sauté onions until caramelised

Add spices and sugar and sauté 30 seconds.

Add lentils, stock, and tomatoes

Bring to a simmer and cook 45-60 minutes or until the lentils are very soft and falling apart. Add extra water if needed.

Puree in a blender or with a bamix until smooth, add chopped coriander and serve.
