Lentil Couscous

• 4 Tbs oil
• 1 large onion
• 3 C water
• 2 C spicy V8
• 2 C brown lentils
• 3 bay leafs
• 2 C couscous
• 1 large chopped tomato
• 1 C chopped basil
• ¼ C grated parmesan
• 1 Tbs parsley

Sauté onion in oil until tender. Add water, V8, lentils and bay leaf. Bring to a boil. Reduce heat to low and simmer for 30-45 minutes until lentils are soft, but not mushy. Remove from heat, discard bay leaves. Stir in couscous, tomato, basil and parmesan. Cover and let sit for 5 minutes. Uncover and fluff. Sprinkle with parmesan. Makes 10 cups.
