• 4 C cooked/drained chick peas
• ½ C creamy sesame tahini
• 4 cloves minced garlic
• 2 Tbs fresh lemon juice
• 1 tsp salt
• 1 C olive oil
• ½ C water

Add all ingredients except water and oil to food processor. Blend until well mixed. Slowly add oil until the mixture is more fluid, let blend for 15 seconds more. Add water until the mixture has evened into a creamy consistency. Makes 5 cups. Optional: add 2 Tbs minced sun-dried tomatoes and 1 Tbs of oil from tomatoes during the initial processing. Optional: mix in 1 Tbs minced fresh parsley after initial processing.

Substitute white beans for the chick peas and you have another tasty dip. I've made it more southwest by subbing black beans for the chick peas and adding some chili powder and cayenne as well.
