Southwest Couscous

• 4 C veggie broth
• 1 C chopped spring onions
• 1 tsp turmeric
• ½ tsp pepper
• 4 4-oz cans chopped green chiles
• 4 cloves garlic, minced
• 2-2/3 C couscous
• 2 tsp salt
• 2 C cooked/drained black beans

In a small saucepan, combine broth, green onion, un-drained chilies, turmeric, and pepper. Bring to boiling; remove from heat. Stir in couscous. Cover and let stand for 5 minutes. Fluff with fork and add black beans before serving. Makes 12 cups.
