With apologies to Paula Deen - I was experimenting because I was bored and came up with a version of her ham butter.
In a food processor finely grind about two to three ounces of baked ham (or country style ham if you have it). Add in 1 stick of unsalted butter (at room temp and cut into cubes), about a teaspoon of Worcestershire Sauce and a 1/2 teaspoon of Tabaco Sauce and process into a smooth paste. Pack into a covered container and refrigerate overnight to let the flavors blend.
Take out of the refrigerator while you are mixing and baking your (buttermilk) biscuits to let it soften a bit. Spread on fresh baked hot biscuits and serve with scrambled eggs. Yum.
I just used some Smithfield ham in my latest batch - should have soaked it a bit to get rid of the salt, will do so next time.
